By Nelly Borsato – F&B Specialist and Sustainability Advocate at Salties & The Deck
The food and beverage industry is a vibrant and ever-evolving sector that delights our taste buds, brings communities together, and fosters culinary innovation. However, as our global consciousness shifts towards sustainability, it becomes increasingly crucial for this industry to adapt and embrace revolutionary approaches that prioritize environmental responsibility.
After birthing two Michelin stars in Milan and Monforte d’Alba, our Founder who is an Italian Architect, Designer and Tourism Entrepreneur partnered with an English Radio Presenter, an Emirati Entrepreneur, a Fijian Magazine Editor and an Egyptian Restaurateur brings Salties, and The Deck, a concept restaurant in an eco-sustainable urban design to West Beach Palm Jumeirah.
When we first sat down to conceptualize the Salties outlet at Expo 2020, we wanted to shed light on the significance of sustainability in the F&B industry and highlight the transformative work being done by the dynamic team in using materials that would otherwise be discarded. We even used sand as part of the flooring to bring in the message of using natural and existing materials within the F&B ecosystem.
As an F&B enthusiast, I have had the privilege of being involved in the inception of exceptional restaurants, including Salties at Aloft Dubai Creek and The Deck in voco on West Beach recently. These experiences have not only deepened my passion for this industry but also fueled my dedication to driving positive change.
All our partners have a growing awareness of our planet’s finite resources, and it is evident that the traditional methods of operating restaurants are no longer sustainable.
Our unwavering commitment to transforming F&B businesses into remarkable success stories has resulted in groundbreaking strategies that prioritize sustainability without compromising on the quality of the dining experience. By focusing on strategic planning, communications, and events, we ensure that each branch of the restaurant experiences continuous growth and success in Dubai’s evolving F&B market.
One of the cornerstones of a sustainable F&B industry is the sourcing of ethically and locally produced ingredients. We recognize the importance of this aspect and work closely with suppliers who share their commitment to sustainable practices. By supporting local farmers and reducing the carbon footprint associated with long-distance transportation, Salties and The Deck not only contribute to the local economy but also reduces the environmental impact of their operations.
We naturally place great emphasis on waste reduction and recycling. Food waste is a significant concern in the industry, and innovative approaches are necessary to address this issue. We implement strategies to minimize waste by using repurposed furniture across our restaurants. By fostering a culture of sustainability, Salties creates an immersive dining experience that extends beyond taste and aesthetics.
The work being done by Salties, The Deck and other visionary leaders in the F&B industry paves the way for a revolution that aligns business success with environmental responsibility. By embracing sustainable practices, we can create a future where culinary delights coexist harmoniously with the preservation of our planet.
However, it is crucial to acknowledge that the journey towards a sustainable F&B industry is ongoing and requires collaboration at all levels. Governments, businesses, and consumers must work together to create an ecosystem that supports and encourages sustainability. Through collective efforts, we can drive significant change and create a positive legacy for future generations.
As a passionate advocate for sustainability in the F&B industry, I am confident that the pioneering work of our teams at Salties and The Deck will inspire others to embark on this transformative journey. Let us seize this opportunity to redefine success in the F&B industry by revolutionizing our approach and creating remarkable success stories that benefit both business and the planet. Together, we can make a difference.
