The dining experience at Francesco Mazzei at Villa Corinthia was a spectacular journey through Mediterranean flavors. During my stay at the Corinthia Palace Hotel, it was the perfect place for serene evening dinners that set the mood for a peaceful, relaxed night after a busy working day.

Set within the stunning ambiance of Villa Corinthia, the evening meal began with the antipasto di mare, a beautifully curated selection of seafood dishes. The spicy tuna carpaccio, raw red prawns, scallop ‘nduja, and grilled octopus were impeccably fresh, each offering a unique burst of flavor. The prawns were melt-in-the-mouth perfection, and the scallops delivered a delicate yet flavorful bite, while the carpaccio added a refreshing element to the course.

For the main course, we indulged in the seafood spaghetti, which showcased perfectly al dente pasta mingling with a generous mix of seafood in a light yet flavorful sauce. However, the true star of the meal was the fregola sarda, a Sardinian semola dish served with locally sourced fish and seafood. Its hearty texture and wholesome flavors made it a standout, particularly as a comforting dish to savor when you miss your mum’s cooking.

In addition to the impressive seafood flavors, Francesco Mazzei’s menu also features Italian classics elevated with local ingredients. The attention to detail is apparent in every dish, from the colorful antipasti to the delicate fritto misto, which highlights seasonal seafood and vegetables sourced from Maltese shores.

The impeccable service, attentive yet unobtrusive, ensured that every dish was perfectly timed and that our meal flowed seamlessly.
